Comfort Food for Those Cold Winter Days

Coming inside from a cold, wet, wintry day and smelling a pot of simmering stew, flaky pastry on chicken pie, or a hearty macaroni and cheese casserole will bring a smile to almost everyone.

One-dish meals are especially handy if you are short of time and still want a well-balanced meal for the family. Most of the ingredients are cooked together, so serving and cleanup are at a minimum.

When making these recipes, think ahead and make extra for the next day, or freeze leftovers that can be used at a later date.

The following recipes are easy to make and absolutely delicious. If you're not a fan of dumplings in your beef stew, make a batch of baking powder biscuits or have thick slices of multigrain bread as an alternative.

If you're wanting something other than pastry on the chicken pot pie, put a layer of creamy mashed potatoes on top and brown in the oven.

Preheat oven to 215 degrees F. Line a baking sheet with parchment paper.

In a large bowl, use an electric mixer on medium speed to beat together egg whites, 1 teaspoon strawberry extract, and cream of tartar until frothy. With mixer running, add powdered sugar in tablespoon increments. Add food coloring and continuing beating until stiff peaks form, taking care not to overbeat.

Transfer mixture to a pastry bag or large zip-top plastic bag fitted with large round tip. Pipe into 2-inch spirals on prepared baking sheet. Bake in preheated oven for 45 minutes to 1 hour, rotating once. Turn off oven and open door. With meringues still inside oven, let dry out for 10 to 12 minutes. Remove parchment paper from baking sheet and let meringues cool completely.

It would appear to me that the time for talking about the un-electability of any individual who is not a corporate operative is over. Can you support the Green Party? Can you convince others to do so? There seems to be zero sense in bickering about anything else at this point. Stack the Congress, the Senate, and the White House with Greens. Or put forth some other rational alternative.

Violence Strangles Party-Town Spirit

It's the bloody battles between police and organized crime that make headlines.

Since Jan. 1, more than 50 people have been killed in the city, some in wild shootouts that terrified bystanders. In January, police discovered an organized-crime hideout near downtown that included a training center for hit men complete with a soundproofed basement shooting range.

Recently, Hacienda Cien Anos, the upscale restaurant that once drew tourists, was identified by U.S. authorities as a front for money laundering.

Downtown has been flooded with police and has been largely free of the violence. No bystanders have been killed in the shootouts. A crackdown on corrupt transit cops has resulted in fewer reports of extortion, and merchants immediately report officers who stop tourists without reason, according to police.


Utes turn to 'Utah Man' Scalley to take over as safeties coach

As expected, Utah coach Kyle Whittingham stayed "in-house" to fill the vacancy on his coaching staff.

Former player Morgan Scalley was officially hired as the Utes' new safeties coach. He'll also be involved with special teams.

"We are pleased to announce the addition of Morgan Scalley to our coaching staff," Whittingham said in a released statement. "As a coach, Morgan brings the same energy and passion to our program that he did when he was a team captain and an All-America defensive back for us. Morgan did a great job this past season in his role as a graduate assistant coach, and after conducting a national search, it became apparent that he was the right fit for our staff."

Scalley enthusiastically agrees.

"I have always been a 'Utah Man' and I'm grateful that coach Whittingham has given me the opportunity to coach at the school I love," Scalley said in the official announcement.

Two Salishan Street fires damage property

An unattended cooking stove caused an apartment fire Thursday night in southeast Salem, while hours earlier, a discarded cigarette sparked a fire at a town house just blocks away, fire officials said.

The two fires were unrelated and in separate complexes, said Salem Deputy Fire Marshal Chris Riffle.

The first fire was reported about 11:15 a.m. at 1529 Salishan St. SE, Riffle said.

Firefighters reported fire and smoke from the exterior siding of the two-story townhouse. The fire quickly was extinguished, and it did not extend into the attic or inside the building, Riffle said.

Resident David Parkins told firefighters he was talking on the telephone when he smelled smoke coming from around his front door, Riffle said.

As he opened the door, he could see fire on the deck, and the smoke alarm inside the home activated.
